Ingredients
- 3 large eggs beaten
- 1 cup vegetable oil
- 2 1/4 cups white sugar
- 2 cups zucchini shredded
- 3 cups unbleached flour
- 1 teaspoon salt
- 1 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1 Tablespoon cinnamon
- 2 cups blueberries rinsed & well-drained

Instructions
- Mix together flour, salt, baking powder, baking soda, and cinnamon. Set aside. Prepare zucchini and blueberries and set aside. Using large bowl, put ingredients in order listed, mixing lightly after each addition. Fold in blueberries last. Pour into greased loaf pans and bake 50-60 minutes at 350 degrees, until inserted toothpick comes out clean. If using foil mini-loaf pans, cool right in the pans. Yum!
